What to expect at a sushi restaurant
Japanese restaurants include sushi bars, ramen shops, izakayas (casual drinking spots with small plates), teppanyaki grills where chefs cook at the table, and specialists in tempura, udon, katsu or yakitori. Many sushi restaurants also offer cooked dishes and bento boxes, so there is something for diners who do not eat raw fish.
What to order
- Nigiri – fish over rice; the purest test of quality
- Ramen – tonkotsu, shoyu or miso broths at specialist shops
- Chirashi or a bento box – good value at lunch
- Gyoza and edamame – easy starters for the table
Good to know
- Lunch sets are usually much cheaper than the same food at dinner.
- Omakase counters often have fixed seatings – book ahead and arrive on time.
- Nigiri is traditionally eaten in one bite; a little soy sauce on the fish, not the rice.
